I could bore you by talking about how busy life has got these days and why I haven’t had chance to post in a while, but let’s not worry about that. Everyone’s busy. Life happens.
Getting things in your eye. Apparently that also happens. And not just in a semi irritating way that washes itself out after a few hours. Like in an actual my eye is swollen and I can’t open it for pain and it keeps weeping kind of way. So here I am in A+E, blinking one-eyed at the screen and trying to take the opportunity to catch up on things I’ve fallen behind on. Like this. Whilst getting intermittently shouted at for sitting in the wrong parts of the waiting room as I get sifted through the various stages of purgatory.
Anyway. I’ve been sitting on this recipe for a while. Ever since I saw Alexandra’s ‘What I Eat In A Day’ post which featured sweet potatoes for breakfast, I knew I had to try it. If it sounds a little strange, it did to me too, but it’s a versatile one. I typically go for a sweet breakfast, hence opting for coconut yogurt and granola and fruit. But you could just as easily go savoury with black beans and avocado. Or spiced roasted chickpeas and tahini, even. I’m merely drawing your attention to the concept. Once you’ve got that, the possibilities are endless
- 1 baked sweet potato
- 2-3 tbsps coconut yogurt
- 1 tbsp nut butter
- Handful granola (like this one or this one)
- Sprinkle of ground cinnamon
