Caramel Smoothie

This is another LA inspired recipe – this time from a smoothie I didn’t get to try (there were just too many!) but whose ingredients list intrigued me. I tried to recreate it once I got home, to the best of my memory, and after a bit of tweaking ended up with something that tastes like caramel/liquid gold. It’s creamy, indulgent, and is sure to satisfy a sweet tooth, but uses only a few wholesome ingredients and leaves you feeling light. It tastes like sipping sunshine. Speaking of which, it seems the sun has finally broken free of the grey clouds and unleashed its warmth and light– summer is here! Maybe add some ice to that caramel.

Serves 1

Ingredients:

  • 1/4 cup pitted dates (if using dried dates, soak them first as it makes them easier to blend)
  • 1 tbsp almond butter
  • 1/4 banana
  • 1 tsp vanilla extract
  • 1 cup almond milk, or less if you like it thicker
  • Optional: 1 tsp pure maple syrup. For me it was sweet enough without syrup, but if you have a really sweet tooth then feel free to add this in.
