I’m home, at long last. Term is over. The last two nights I have had the longest, deepest, most restful nights’ sleeps I’ve had in longer than I can remember. You know when you wake up after a long, deep sleep and you just feel dreamy? I’d go further and say I feel human again. There is truly nothing more restorative, mentally, physically and emotionally, than a good sleep.
In the few hours that I’ve been awake, I’ve spent the days lounging around catching up on all the TV I’ve missed, taking nice long baths, eating and planning things for the blog, and lying by the fire with my cat. All of these activities have been compatible with hot chocolate drinking, and as I’m doing a coffee detox after my reckless abuse of it in recent weeks, it has been my perfect companion.
I appreciate this is now my third hot chocolate recipe, but both of the others require a little more complex prep or equipment — totally worth it, but sometimes I just want it now and can’t be bothered with the extra steps. So this is actually the recipe I use the most as it’s just so easy and simple. I think you’ll love it!
- 250 ml/ 1 cup milk (any milk is fine; I like unsweetened almond milk)
- 1 heaped tbsp cocoa powder (please use fairtrade!)
- 2 tbsps pure maple syrup or agave nectar
- 1tsp vanilla extract (optional – can sub peppermint extract or another flavour if you like!)
Simply add all the ingredients to a small saucepan and heat gently until the cocoa is dissolved into the milk completely and it is nice and warm. Pour into a cup and enjoy — top with cream and marshmallows if you like!
