Apple, Beetroot & Ginger Smoothie

Anyone else lagging slightly? It’s sixth week here in Oxford,  which means there are just over two weeks left of term and it’s at this point we all start to drop. I’ve been practically mainlining coffee, and the prospect of having 5 essays left to complete in the next 15 days makes me want to curl up in my bed and never get out. There have been a lot of black-tie dinners and drinks receptions over the last few weeks too for one reason or other, the dinners ranging from between 3-5 courses each time, and the alcohol unlimited. Basically, my body is not my best friend right now.

Smoothies, however, are. Quick, easy, and can be downed in one if necessary (not recommended), but it also means you get several portions of vital fruit and veg into your system quickly and painlessly, plus the addition of lemon and ginger give it a nice zing as well as being great for digestion. Winter may be getting decidedly wearisome, but thankfully it’s nearly March which means it’s nearly Spring! That does, however, means that what’s in season now won’t be for much longer. I like to think of this as a celebration of winter’s produce (with a little help from last summer’s berries).

Serves 1

Ingredients:

  • 1 cup cooked beetroot (I buy mine ready cooked from the supermarket because I’m lazy)
  • 1 apple, chopped and cored
  • 1 tsp ground ginger
  • juice of 1/2 a lemon
  • 1/4 cup milk (I used almond milk)
  • 1/2 cup water
  • 1/4 cup berry chia jam (or just use frozen berries and a drizzle of honey)
  • handful spinach (optional but good for you!)

Simply add all the ingredients to a blender and blend until smooth! Just be careful….
